Is that even possible? Can you make something healthy that is “double chocolate”? Maybe that is a bit of a stretch. This recipe is a bit healthier than your average Double Chocolate Zucchini Bread.
Double Chocolate Zucchini Bread (with a healthy twist)
2 eggs
1/3 cup applesauce
1/3 cup oil
1 1/2 cups sugar
2 cups grated zucchini
1 teaspoon vanilla
2 cups whole wheat flour (I use whole grain flour)
1 cup unbleached white flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup cocoa
1 cup chocolate chips
1/4 cup flax seeds
Mix together first 4 ingredients. Add zucchini and vanilla. In a separate bowl, mix together dry ingredients. Add to the zucchini mixture. Stir in chocolate chips and flax seed. Place mixture into 2 greased and floured loaf pans. Bake at 325 for 1 hour. Enjoy!
